Total Time: 17 Minutes
1 tbsp canola oil
1/4 cup diced onion
1/2 serrano pepper, thinly sliced
1/4 small potato, diced
1/4 cup fresh bulk sausage
Optional: 2 tbsp sour cream
Optional: 1/4 cup of salsa
2 tbsp shredded cheddar
2 whole-wheat tortillas (7" each), warmed
Heat 1 tbsp of canola oil in a pan over medium heat.
Add the potato, pepper, onion and sausage to the pan.
Cook the vegetables and sausage; breaking up the meat, until the potato is done, cook about 10 minutes.
Add the eggs and scramble eggs until your desired consistency is reached.
Add the cheese and melt on the eggs.
Layout the tortillas and add everything from the pan on the 2 tortillas respectively.
Optional: Add sour cream and/or salsa for toppings.
Wrap the tortillas.
